A Belgian Tripel should be surprisingly light and drinkable, considering their considerable strength. Like a traditional Tripel, we fortified ours with Belgian Candi Sugar to increase the alcohol level without sacrificing the light body and dry finish. Unlike a traditional Tripel, we also fortified ours with 100% pure raspberry concentrate, giving a wonderful raspberry flavor and aroma to an already wonderfully delicious brew. The complexity is a journey, starting with the raspberry notes, followed by traditional spicy/peppery notes, and finishing with the dryness and alcohol warmth that you would expect in such a brew.
